For that beautiful masterpiece, be sure to ask the baker for a sample before ordering. Typically, most bakers will create a tiny version of the masterpiece for you before you make that oh-so-important decision. If you enjoy cooking and are willing to try your hand at making your wedding cake, you can save enough to enjoy a wonderful honeymoon! At minimum, at least the cost of a nice hotel. They sell fresh and ‘day old’ so of course, opt to buy the freshest available cakes for your special day. This wedding cake recipe will feed about 25 guests, so you will need to accompany it with a Groom’s cake to ensure enough for all your guests. For the Fairy Angelfood Wedding Cake you will need:
Keep in mind that the above recipe is very easy to add or subtract. If you need more topping, then use more. Less, then use less. Generally, there is a hole in the center of Angel Food cakes. Place an upside-down glass into the hole (before frosting) that you have covered with white tissue paper – or any other material that would serve to conceal the glass. Purchase a bride and groom ornament to place on top of the covered glass. You can even buy a tiny candle ring as used with tapered ‘stick’ candles to place under the ornament. This also helps conceal your glass or stand. Begin by arranging the lace in a ring around your base and set one cake on the lace rearrange the lace so that it fits adequately around the cake. Next, gently fold (this is important) strawberries or preserves with a bit of whipped topping. Do not beat or mix or the whipped topping will disintegrate. Spread on the top of the cake. Chill until set. Remove when chilled then place second cake on top of the preserves. Chill for another half hour or until cake is cool. Frost cake with remaining topping, creating wispy folds in the topping as you work. Place cake in freezer up to one hour before the wedding. Before serving, sprinkle the sugar glitter on the cake, decorating with the canned whipped cream if desired. You can complete your decorations by adding romantic items such as doves, gold rings, pearls, silk flowers, edible flowers. Be sure to remove inedible items before serving the wedding cake. Recipe for Island HAWAIIAN LUAU Bridal Cake This is a quick, economical way to create a very beautiful wedding cake. Purchase four large round or square, white coconut cakes. Again, check your local thrift bakery for the best prices. OR, check out the delicious frozen coconut cake options at your local market which are square and work perfectly in creating this lovely vision of a wedding cake. If you choose round cakes, place then in a circle so that a ring forms in the middle of the four cakes. Again, make a stand and place a bridal ornament on top, such as a bride and groom, doves, etc. If the cakes are stacked, you will need to buy special devices that help support the cake. Decorate the cakes with either lace ruffles that are applied to the base, silk roses, pearls, beads – be creative! If you opt for the square cakes, place all four onto a large cardboard covered mat so that they create one large cake with a cross. Insert silk roses into the cross, then go from corner to corner, diagonally to create two more lines of roses. The center can be decorated with a wedding ornament to accent the cake. Again, colored lace can be fitted under the cake to add elegance. OR, arrange the cakes as you wish and 'frost' them with thawed whipped topping. Decorate with sugar sprinkles. You will need to use about 6 square cakes to feed approximately fifty wedding guests. French Silk Wedding Cake Recipe This wedding cake is wrapped in fondant and decorated with silk flowers, doves, and then draped with strands of pearls. You will need two bases for the cakes and a tiny set of ‘stairs’ or a ‘bridge’ that you either make or purchase. If using a small bridge, arrange both cakes on a cake plate close together so that the bridge connects both cakes. If using a set of stairs, they can be easily constructed out of thick poster board that has been folded as you would a fan. Cover with foil, fabric or lace if desired for an eye-pleasing presentation. One cake will be uplifted on a pedestal of sorts - such as a stemmed cake stand. The second cake will set flat, such as on a cake plate. The tiny (or miniature) set of stairs will be placed on top of the lower cake, leading up to the pedestal cake. If the stairs do not connect to the top cake, you will need to simply lower or raise the cakes to accomplish such. Adding felt or fabric-covered cardboard to the bottom of the cake plates works great in elevating the cake so that the stairs connect. Place a wedding ornament of a bride and groom on the either cake. Rose petals can also be strewn over the cake for added elegance. This cake feeds fifty or more hungry people. You will need: 15” cake pan sprayed with non-stick spray apricot preserves 6 boxes of white cake mix (or you can bake from scratch) egg whites for cake mix 2 to 3 large bags of powdered sugar OR purchased frosting white corn syrup
Bake the cakes according to directions. You will need to end up with four useable 15” round one-layer cakes. Let the cakes cool completely. To prepare fondant slowly mix syrup with powdered sugar, one bag at a time until a fondant forms. Work with one bag of the powdered sugar at a time. You may need more than one bag to cover each stacked cake, so adjust your recipe accordingly. Do NOT put fondant between the layers. The added weight will collapse the cake. Place one cake on stand (you can trim this with lace if you desire). Spread with apricot preserves and place second layer on top. Roll out fondant until it’s large enough to drape over and cover the cake. Trim into a large circle before covering the stacked cake. Drape fondant over cake; fondant should be pliable so you can fashion the cake where needed. Remember, decorations will cover any flaws and add to the beauty of the cake. Make the second two-layer cake and elevate. Attach your bridge or steps. Decorate. Cake can be made several days in advance but must be kept in the refrigerator. Make extra fondant for any touch-ups you may need to do before the Reception. Food colors can be worked into the fondant to match the wedding colors, if desired. Quick Wedding Cake Ideas You can take ANY cake and turn it into an instant wedding cake by adding decorations. Remember those pearls, silk flowers, and special wedding decorations? A bit of ribbon and some pretty lace to surround the area where the wedding cake will be presented also makes an elegant presentation. If the cake isn't large enough, put two or three together by forming a circle of sorts and fill in the center with a bride and groom decoration. Whether you make a cake to decorate, or purchase a cake from your favorite bakery to decorate, you can indeed create a magical cake for your wedding. One of my favorite things to work with is fondant. Although it can be readily purchased, a quick recipe of powdered sugar and white corn syrup will work well in creating a fondant 'dough'. The fondant can be colored also by adding a drop or two of food coloring and working it into the fondant. To make fondant, simply add just a bit of white corn syrup to the powdered sugar at a time to create a dough-like texture that can be rolled out with a rolling pin. Simply use a rolling pin to roll out the fondant, then carefully drape it over the cake and trim off the excess. Adding silk flowers or edible flowers to the cake adds depth and beauty. Just be sure to remove any inedible items before serving the cake. GROOM CAKES, RECIPES & IDEAS:This wedding groom cake idea is extremely easy! Make (or purchase) your favorite Cheesecake recipe then ‘frost’ with whipped topping and sprinkle with sugar glitter. A chocolate devil’s food based cake will compliment the Fairy Angel Food Wedding Cake. Another idea is to purchase a very large cake, then re-frost with whipped topping to create volume. Use your imagination to decorate plastic champagne glasses, black bow-tie, etc. After all this is a ‘manly’ cake!
